Simple, delicious, fresh and full of so much flavour, this red pepper and tomato soup is a real winner and can be eaten all year round – and when cooked in the Thermomix takes no time at all; great if you find yourself looking after children or running out of time!
Before you can buy a thermomix you are given a demo of all the things it can do. Breads, soups, sauces, steamed fish and veg, desserts, you name it, there’s a good chance the thermomix can do it without a lot of the fuss and time associated with many such dishes.
Anyway, though most of the food cooked was fantastic, the real clincher was the soup – red pepper and tomato – simple, easy, healthy and absolutely delicious. It has remained one of our favourite dishes to this day!
Recipe
Ingredients:
40g rice
20g olive oil
2 red peppers, stem and seeds removed
1 small onion, peeled and cut into quarters
2 garlic cloves, peeled
400g fresh tomatoes, chopped in half
400g vegetable stock
salt
pepper
cayenne pepper (optional)
Method:
Pour your rice into the thermomix bowl and grind 30 second/speed 10. Tip into small bowl and reserve.
Toss into the bowl the peppers, garlic and onion with the oil and chop 2 seconds/speed 5.
Scrape down the sides and sauté for 5 minutes/100°C/speed 1.
Add the stock, tomatoes, ground rice and seasoning and cook for 14 minutes/varoma/speed 2.
Purée the soup for 1 minute/speed 10.
Serve in warm bowls with some delicious bread – if you are feeling adventurous then olive bread works beautifully alongside tomato and red pepper!
