Pizza – surely tomato, cheese, pepperoni, chilli oil? But how about nutella, banana and raspberry coulis, flambéed in brandy?
Almost full from several rounds of pizza with a few friends, we were thinking about some mince pies and brandy butter for pudding. But since I had a couple more batches of pizza dough left, I threw out the seemingly crazy idea of a pizza pudding – I got a couple of quizzical looks, but someone mentioned nutella and I knew we had to give it a go.
Oh wow did it work… pizza base, nutella spread, banana slices and a homemade raspberry coulis, flambéed with brandy.
I will be refining the recipe over the next few weeks but if you’ve some dough to hand and want to have a little fun then give it a go – I can guarantee you will surprise people.
2 bananas, cut into 1 inch chunks
2 tbsp brandy
flour to dust the peel
for the coulis:
200g fresh raspberries
1 tbsp sugar
1 tbsp water
splash of lemon juice
To make the coulis: add the ingredients for the coulis into a saucepan over a medium heat. Crush the raspberries with a back of a fork and cook until the sugar has dissolved and the raspberries have become saucy. Remove from the heat and strain through a sieve. Set aside to cool.
Light up your uuni/pizza oven and bring up to temperature or add a couple more scoops of wood if you’ve been cooking pizza.
Gently warm your brandy over a low heat.
Scatter a little flour on the peel.
Flatten and toss your pizza dough until you have a thin base. Place on the peel.
Spread the nutella smoothly over the base (like you wood a tomato sauce).
Add the banana evenly on top…
…and drizzle over the raspberry coulis.
Slide your pizza onto the uuni stone. Cook for 20 seconds, then spin 90º. Repeat until the pizza’s cooked on all sides
Place on the table, turn down the lights. Light the brandy. Pour over the pizza and enjoy the beautiful blue flames.
Slice with a pizza cutter and see the amazement in everyones eyes – pizza is not only one of the best foods, it’s a brilliant dessert too!
