If you are planning to light your bbq but aren’t quite sure what side to throw with whatever you are cooking, then give this aubergine dish a go: it is incredibly simple and leaves you with mouthwatering results – a perfect crispy edge with gooey interior.
1 tbsp balsamic vinegar
2 tbsp olive oil
1 tbsp pomegranate syrup (optional)
pinch of salt
pinch of pepper
Cut the aubergine into 1cm slices.
Mix together the marinade ingredients and pour over the sliced aubergine. Leave to marinade for at least an hour.
Light your bbq and when it’s hot, throw your aubergine onto the grill.
After 3 minutes turn it over and grill for a further 3 minutes.
Take off the bbq and serve immediately – goes with pretty much anything.
As you can see we had it with lamb breast and a side salad.
